In conjunction with our feature this week introducing students to the new Resident Directors on campus, the Beacon brings a special edition of Cafe Creations. Two of the new RDs (Corey Kundert was away for his wedding and unavailable for comment) have shared the ways that they add a little variety to their mealtime.
Kendall Stanislav the new RD of the North Suites said his favorite recipe is for the last part of a meal: dessert. He mixes soft serve ice cream with cereal and tops it off with the cinnamon and sugar mixture found at the toaster station.
Fern Smith Hall RD Alyssum Roe takes advantage of both the taco bar and the salad bar during the lunch hour to create her own form of taco salad. First, she puts some of the leafy greens into a bowl, and then adds cheese (the shredded cheddar works best for melting). Next, she puts on the taco meat. When the taco meat is not available, the chicken on the salad bar works just as well. Finally, she tops it off with crunched up tortilla chips. Favorite additions include sour cream, olives, black beans, and some jalapenos. Alyssum also enjoys dipping her Golden Grahams cereal into peanut butter.
